Xanthan gum’s structure starts from a simple sugar, which is then metabolised by a healthy bacteria (called xanthomonas campestris) into a complex carbohydrate. The structure of this new carbohydrate has unique properties that make it an efficient and natural thickener and stabiliser when combined with other ingredients.
